Cocktails: Nicole's Old Fashioned Rum Punch.
Appetizer: Plantains wrapped in Bacon.
Main Course: Jerk Pork or Chicken with Pineapple Salsa, Red Beans and Rice, and Nicole's Crunchy Rainbow Salad.
Dessert: Coconut Tart.
