This curry class is one of the most popular because many people love the taste of curry spices and the experience of making roti.
Curry and roti are deeply woven into the history of the West Indies. Each island tends to have its own personaltiy of curry and roti. (For a bit a history lesson visit NicolesTable.com/classes/coordinating-curries/).
In Coordinating Curries, we create a meal that fuses a little of the old styles with some newer Western flavors. You will learn about the history of curry and short cuts that can be used to create various curry based meals. The goal will be to make it easy for you to go home and cook the same meals you made in class whenever you wish. All meals are made with as much local foods as possible so the ingredients may vary from class to class depending upon availability and seasons.
The dessert and the beverages are selected to compliment the meal and maintain a Caribbean flair. The desserts we have listed below are the most common, but others pop up on occassion when certain fruits are in season. A typical menu includes:
Cocktails/Drinks: Nicole's Old Fashioned Rum Punch, local juice, water.
Appetizer: Coconut Crisps, Plantain Chips and... Phulourie or Antiguan Pumpkin Soup.
Main Course: Curried Chicken, Pumpkin, Chickpeas. Sides of Rice, Spinach in Coconut Milk, vegetables, Roti, and Nicole's Crunchy Rainbow Salad.
Dessert: Bread Pudding, Buttered Rum Cake, or Coconut Custard Tart.
Variations can occur based on availability of certain ingredients. Soft juices are included.
